Culinary history
A short food history of Jerusalem
Jerusalem's food grew out of its communities: the Old City's Arab bakeries and hummus houses, and the Kurdish, Iraqi, Moroccan, Yemenite, Persian and Ashkenazi kitchens of the neighborhoods built outside the walls from the 19th century on.
Mahane Yehuda market, which began in the late Ottoman period, is still the city's kitchen, and much of Jerusalem's restaurant scene keeps kosher.
