A short food history of Paris
The modern restaurant took shape in Paris in the late 18th century: a dining room where guests chose from a menu at separate tables. After the Revolution, cooks who had served aristocratic houses opened their own.
For centuries Les Halles was the city's central market, until it moved to Rungis in 1969. The bistro, the brasserie and the boulangerie remain the daily rhythm, alongside one of the densest concentrations of fine dining anywhere.
