A signature bigoli pasta dish dressed with lemon butter, artichokes, and Parmesan.
Bigoli is a type of extruded pasta, characterized by its long and thick strand shape. Historically, it was made with buckwheat flour, but it is now more commonly prepared with whole-wheat flour and can sometimes include duck eggs. This pasta is extruded through a device called a bigolaro, which is also the source of its name.
