Mochi is a Japanese rice cake, primarily made from mochigome, a short-grain japonica glutinous rice. Its preparation involves steaming the rice, pounding it into a paste, and then molding it into a desired shape. While eaten year-round, it is a traditional food for the Japanese New Year and is traditionally made in Japan during a ceremony called mochitsuki.
