Ichiran Ramen in Shinjuku is renowned for its singular focus on perfecting Tonkotsu Ramen. It offers a unique dining experience with individual 'flavor concentration booths' designed for solitary enjoyment and minimal interaction, allowing diners to focus entirely on their meal. The ordering process is highly customizable, allowing patrons to specify broth richness, garlic level, spice, and noodle firmness via a sheet and vending machine system.
Customer Perception
Customers consistently praise Ichiran for its delicious, rich, and creamy Tonkotsu broth, perfectly cooked thin noodles, and tender chashu pork. The customizable ordering system is a major highlight, allowing diners to tailor their ramen to their exact preferences. While there are often long lines, reviews note that the wait usually moves quickly. The unique individual dining booths are appreciated by many for providing a focused and private eating experience, though some acknowledge it's a very touristy spot.
Ichiran is dedicated solely to the study and perfection of Tonkotsu Ramen. The restaurant utilizes a unique ordering system involving a vending machine for initial selections and a customization sheet at the booth. Diners are seated in individual cubicles, often referred to as 'flavor concentration booths,' which feature a small curtain that lifts to serve the ramen, minimizing interaction with staff.
Given the frequent mention of long lines and wait times (20-50 minutes), it's advisable to visit during off-peak hours if possible, though specific 'best times' are not provided. Expect a wait, especially during standard meal times.

A great 24-hour ramen spot for a unique solo dining experience in Shinjuku!
Location and Queue:
* Easy Access: Located just a 5-minute walk from the Shinjuku station junction, making it very easy to reach and return from.
* Open 24 Hours: Operating around the clock, so you can drop by at any time of the day or night.
* Wait Time Notice: Before paying at the order kiosks, there is an official paper at the entrance displaying the current estimated wait time, so you can decide whether to stay or not.
* Short Wait Time: Typical wait times range from 20 to 40 minutes, but when I visited, I only had to queue for 15 minutes.
Dining Experience and Food:
* Unique Ordering System: It is completely worth waiting in line to experience their distinct, rule-based ordering process, where you can get your custom bowl of ramen without needing to speak to anyone.
* High-Quality Meal: The ramen is top quality and well worth the price—you get what you pay for.
* Complimentary Water: Free cold water is provided. I regretted buying an extra cold drink since the complimentary water was already great, so I recommend skipping the extra drink.
* Extra Details: They distinctly display part-time job recruitment notices right on the individual dining tables.
Final Verdict:
A smooth, high-quality, and unique dining experience that is well worth the queue when visiting Shinjuku!
A must try ramen shop when visit Japan. The taste of ramen is defined by its rich, creamy, and deeply savory tonkotsu (pork bone) broth.
The ramen thin but firm and chewy texture smooth with the umami flavour that you won’t forget you will finish the last drop of the broth in the bowl. The red sauce is the soul of the soup. Although was told to wait 30 minutes but the crowd most fast. Highly recommend to try. Whenever in Japan will not miss to have ramen here.
A Must-Try Ramen Experience in Shinjuku! 🍜
ICHIRAN is one of the most famous ramen restaurants in Shinjuku. A wait of around 20 minutes seems normal, but the line moved quickly, and we were seated sooner than expected.
The individual dining booths were unique and allowed us to focus completely on the ramen. The ordering system was convenient, with options to customize the richness of the broth, garlic, spice level, and noodle firmness.
I chose the recommended settings. The tonkotsu broth was rich and creamy without being too heavy, and the thin noodles, tender pork, green onions, and spicy red sauce worked perfectly together.
The ramen was so delicious that I almost finished the broth! 😋 If you are visiting Shinjuku, I highly recommend experiencing ICHIRAN. 🍜🇯🇵
Been planning to have it in Taiwan and Hong Kong, but we ended up lacking time — only to finally be able to try it in Japan!
Not a big fan of ramen, but this is definitely an exception. Love the drama of it all.
You start by getting a QR code, then they email you once it’s time to line up. It gives you a chance to roam around instead of waiting in line for hours. Once you receive the email, you head back and line up to order through their vending machine. After ordering, you’re ushered into the waiting area where you wait for your cubicle. Thankfully, it didn’t take too long to get seated.
I love eating in solitude. As an introvert, this setup is a dream. You can really focus on the taste of the food.
Ordered the Classic Tonkotsu, a half-boiled tamago, and their original tea. I love how customizable everything is — broth thickness, noodle firmness, and spice level. The broth was so good. Next time, I’m definitely ordering extra sliced pork because it was incredibly tender and the smokiness was just right.
This has got to be one of the highlights of my Japan trip. Will definitely go back when I get the chance!
The best ramen in Tokyo, hands down. Super welcoming staff and amazing food. There is a line, but it's totally worth the wait. I’ve already been twice on my first trip to Japan! Every tourist should try it.✨
