A collection of award-winning restaurants founded by Chef Peter Merriman, located across various Hawaiian islands, known for its dedication to Hawaii Regional Cuisine and local ingredients.
Came here for dinner and left with very full and happy bellies. The food here was to die for- particularly the crème brûlée (the best creme brûlée I’ve ever had in my entire life). While I didn’t get photos of everything we ate, the lamb special pictured below was fantastic. Not pictured was the delicious table side poke which we would come back for time and time again.
Someone in our party is celiac and they took such care and time in explaining each menu item and which options were gluten free. The service was fantastic. I will be dreaming about this place for years to come. This is a must.
If you’re looking for the best dining experience on Maui’s northwest side, this is it. If you’ve already been to the casual “by Merriman” spots along the beach, don’t assume this is the same restaurant with a nicer view — it isn’t. The seasoning is precise, and the fundamentals (sauces, temperature, execution) are on a different level entirely.
That said, calibrate your expectations. Island supply constraints are real, and if you walk in expecting mainland fine dining, you’ll be disappointed. What you get instead is the sense that the owner has thought hard about how to make local ingredients carry a plate — and that intent comes through in almost everything. The one miss was the chilled shrimp, which didn’t live up to the standard the rest of the meal set.
The service deserves its own mention: the staff were extraordinarily warm and attentive, the kind of hospitality that makes you want to linger over dessert.
Bottom line: Worth it for a proper meal in West Maui, as long as you accept the “for Hawaii” qualifier.
We had an exceptional experience at Merriman’s! My husband brought me here to celebrate my birthday, and everything was truly memorable.
The welcome was warm, and the view was stunning. We were taken care of by Carmen, who was efficient, attentive, and very friendly throughout the evening.
The food was delicious, and overall, the experience offered great value for the price.
If you mention that you’re celebrating a special occasion, they go the extra mile: we were welcomed with a glass of prosecco, given a personalized menu, and treated to a special dessert: such a thoughtful touch.
Thank you for making my birthday so special!
Had an absolutely beautiful night here to celebrate our honeymoon. We managed to snag a resy at the bar a day or two in advance (this is a hard reservation to get, but I recommend calling in and asking about any cancelations). The team here is fantastic. A well-run restaurant. Very organized. The food came out to perfection. The cocktails were all spot on. Ryan served us and took immaculate care of us. Thank you all for such a lovely evening!
Outstanding dining experience! The American Wagyu mini burgers were absolutely delicious—juicy, flavorful, and perfectly cooked. The fish was fresh and beautifully prepared, and the desserts were the perfect way to finish the meal. What truly made the experience exceptional, though, was the service. The staff was warm, attentive, and genuinely welcoming from start to finish. Highly recommended!
