Gnudi

Gnudi are dumplings similar to gnocchi, but made primarily with ricotta cheese and semolina instead of potatoes. They are often referred to as "naked ravioli" because they consist of the filling, typically ricotta and spinach, without the surrounding pasta dough. The name "gnudi" is Tuscan for "naked."
