Joe'S Kansas City Bar-B-Que

Joe’s BBQ was a great place to stop and try some Kansas City barbecue. The food was tasty, and you can tell they put care into their flavors and preparation. The BBQ had a good smoky taste and the overall experience was enjoyable. While it wasn’t my personal favorite BBQ spot in Kansas City, I’m glad I had the chance to try it. Everyone has different tastes when it comes to barbecue, but Joe’s definitely delivers a quality meal and is worth checking out if you’re looking for a good BBQ experience in the area.

This is arguably the most legendary barbecue restaurant in Kansas City. What's it like to wait in line for almost half an hour on a Wednesday afternoon at 3 pm? Burnt Ends: The best dish of the day, truly a representative of Kansas City barbecue. The perfect balance of fat and lean meat—the fat was tender and oily, the lean was soft and juicy—a truly soul-satisfying experience. Unfortunately, it was a little too salty. Dipping it in the sweet, sour, and slightly spicy Night of the Living Bar-B-Q Sauce neutralized the saltiness and added a touch of stimulation to the taste buds, elevating it to another level. Ribs: Once selected as one of the "America's Best" ribs. The picture shows only half slab, which feels a bit small 🤣. The fat melted into the muscle fibers, making the meat firm on the surface but actually tender; it fell off the bone with a gentle touch. The seasoning was very restrained, with only a subtle smoky flavor, highlighting the natural aroma of the meat. It's great with a simple dip of salt and black pepper, but even better with a little lemon juice! Pulled Pork: Tender and juicy, not dry at all, with a rich smoky flavor—the best pulled pork I've ever had. Sausage: Firm and springy, crispy on the outside and tender on the inside, with a rich smoky flavor, a warm aroma of black pepper, and a distinct sweetness. The Z-Man: A legendary sandwich created in 1997. The smoked brisket and Provolone cheese create a robust aroma, while the onion rings add a crispy texture. However, the Joe's Kansas City Bar-B-Que Sauce was too strong and sweet, largely masking the natural flavors of the ingredients. In some ways, it's better enjoyed separately. Creamy Cole Slaw: Standard flavor profile, with just little toppings, quite refreshing. BBQ Beans: A surprisingly delightful side dish! Various beans were stewed with grilled beef brisket and shredded pork. The meat melted in the sauce, resulting in a rich and mellow flavor; the beans were incredibly soft, served hot with a hint of spiciness—a truly comforting meal. Potato Salad: The salad dressing was too creamy and sweet. Slide of Texas Toast: The toast itself was quite ordinary, but soaked in the grilled meat juices, it became completely different! All the meats are pre-grilled, and the staff cuts them according to the order. I imagine it would be even better if they were freshly grilled, but given the price and the self-service nature with no tipping required, it's incredibly affordbale in the US.

We went to the original "gas station" version, 30 minutes or so in line. Every staff interaction was great, as were other customers. Best baked beans and cornbread I think I've had. Ribs were bland, brisket was bland. Both had great texture. Sauces were on point. Burnt ends and pulled pork were wonderful. Slaw was very good. Mac n cheese was better looking than tasting but serviceable.

I know some would call me crazy for giving this place five stars for atmosphere, but in my opinion, the “controlled chaos “ is part of what made this stop a memorable event. The line was pretty long. It moved really fast! The staff is a well oiled machine, taking your order, assembling meals, calling them out for pickup, clearing tables, and all other of this in a friendly, cheerful environment. The vibe saturates the clientele. And then, there’s the food. Oh yeahhhhh. So good! We both had the Z Man, the sandwich that is among the fame garnering items of n the menu. Truly the most moist and tender brisket I’ve had. I also had spicy slaw, which I loved. If you like BBQ, you owe it to yourself to try this place.

Joe's Kansas City is the rare restaurant where you actually feel a little excited standing in line, because the smell of the smoke hits you before you even get inside. The original location on 47th Avenue operates out of a functioning gas station, which sounds like a setup for a joke but is in fact one of the most charming things about it. Anthony Bourdain put it on his list of places to eat before you die, Barack Obama had Air Force One pick up an order, and Travis Kelce apparently comes regularly. None of that would matter if the food didn't back it up, and it does. The Z-Man sandwich is the signature and it's the right place to start. Smoked beef brisket, melted smoked provolone, two crispy onion rings stacked on top, all of it on a toasted Kaiser roll. The brisket is sliced thick but still tender, the onion rings add a crunch that somehow holds up through the whole sandwich, and the combination is the kind of thing you think about later. The burnt ends, available on Mondays and Saturdays, are the other dish that defines this place. Caramelized, smoky, fatty in the right way, served by the pound or as part of a plate. We also had a half slab of pork ribs which were fall-off-the-bone tender with a smoke ring all the way through, and a side of BBQ beans that were thick and sweet and properly cooked. The fries are seasoned with Joe's own spice blend and are genuinely some of the best fries you'll find next to barbecue anywhere. Order at the counter, find a table, and don't skip the sauce station. The line is real but it moves.
