Borscht is a sour soup found across Eastern Europe, Central Asia, and Northern Asia, typically made with meat stock, vegetables, and seasonings. While the name is often associated with a Ukrainian version featuring red beetroots for its characteristic red hue, it also encompasses other sour soups like green borscht made with sorrel or white borscht based on rye.
